Easy ways to put a jug to work this week.

Cornmeal fried catfish

Season 2 lb of catfish fillets with salt and cayenne, then dredge in cornmeal. Fry in 1 inch of oil at 350°F for 3 to 4 minutes per side, until golden and the fish flakes easily. Drain on a rack.

Cut corn tortillas into 6 wedges each. Fry in small batches in 1 inch of oil at 350°F for 1 to 2 minutes, until crisp and golden. Drain on paper towels and salt right away.

Skillet cornbread

Whisk 1 cup of cornmeal, 1 cup of flour, 1/4 cup of sugar, 1 tablespoon of baking powder and 1/2 teaspoon of salt. Stir in 1 cup of milk, 1/3 cup of oil and 1 egg. Bake in a greased 10-inch skillet at 400°F for 20 to 25 minutes.
